Dinner Made Easy with Marathon Foods

Hello Lovelies Hope you have all been well,

Today I wanted to share some easy Dinners with you, and with the help of Marathon Chef direct foods.

I recently came across their amazing range of Chef Direct Foods and have been amazed at how delicious they are and not to mention having dinner or Lunch ready super-fast.

This was perfect for me, as a Mum, running my own business having a fussy eating toddler and a home to run, getting dinner or lunch ready some days was a struggle and not to mention having a variety of foods to eat each day.

Marathon Foods have a variety of yummy ready made dinners made fresh and kept that way by use of clever technology and packaging method without the need for refrigeration or freezing. Their creations are free from artificial flavors, colors or preservatives and there is no added MSG so it’s also perfect for the kiddies.

Their Chef Direct foods are; Con Carne Mexican Mild Chili with Beef & Bean, Beef Meatballs with Traditional Tomato Basil Sauce,  Beef Hot Pot with Root Vegetables, Lamb Shank with Red Wine & Rosemary and Lamb Shank with Traditional Mint Gravy.

 

                                                                                

We have tested out the Beef Meatballs with Tomato & Basil sauce along with the Con Carne Mexican Mild Chili and they were a big hit with the whole family, Hubby even wiped his plate clean ha ha ha. They were so easy and fast to prepare, I was so glad I had these on hand in my pantry. I sure will be stocking up for those extra busy days getting dinner ready on time seems hard. 

Below I’ve created the Con Carne with some rice; this was a big hit with Christie as she’s now starting to get into eating some rice again too, but it can easily be substituted with wraps or taco shells. If you are not feeding young children, and love a really hot and spicy dish then I would add some chili flakes to the dish or fresh chilies on the side. You can also serve this with some fresh spring onions on the side too. I do advise to try a bit first though before adding any extra chili.



Another of my favorite ways to serve con carne is over baked potatoes with melted cheese and sprinkle finely chopped spring onion – I can’t think of a more comforting meal to enjoy. With Marathon Foods Chef direct meals you will have dinner sorted for the whole week in a instant! #win #win 

CON CARNE & RICE RECIPE

INGREDIENCE

  • 1 x 300g Packet of Marathon Chef Direct con Carne
  • White Basmati rice – cooked 
  • Grated tasty cheese or other preferred cheese
  • Chopped avocado, Sour cream or Greek yogurt, Corn chips and fresh coriander to serve.
METHOD

For the rice:
  • Place 1 cup of white rice in the pot with 2 cups of warm water, add seasoning and cover with lid. Lower heat to a slow simmer. Let t rice cook for 20min without opening the lid.  {Or prepare your desired rice as normal} 

For the Con Carne:
  • Remove con Carne from outer pack and cut top off plastic pouch, place pouch in microwave safe bowl. Reheat on high for 3 minutes. Let stand for 2 minutes. Stir ingredients thoroughly.
  • Place rice in a plate, top with corn carne and then the grated cheese (re heat in oven if you would like cheese to be melted)
  • Top with chopped avocado and Sour cream to the side.
  • Sprinkle finely chopped coriander on top and serves with Corn chips and lime slice.
NOTES: Appliances may vary on cooking times. For a more spicy Con Carne add chili flakes to the Con Carne mix while preparing or sprinkle flakes on top prior to adding cheese.

ALTERNATE OPTION: Alternatively If you have limited time, substitute rice for wraps or taco shells and dress with same ingredience. This is perfect for a fast meal and kids love making their own wraps.
